On the 10th Day of Christmas My True Love Gave to Me: Scalloped Pineapple

If you are making a ham I have a great side to accompany it. It is like a casserole or a bread pudding, but it is called scalloped. Not sure why. But whatever you call it, it is soooo good. If you are eating out, have fun, but if you want to make this with a spiral ham, you will not be sorry.

Scalloped Pineapple Ingredients:

1/2 cup butter, softened
1 cup sugar (this is what the recipe calls for, but I am sure you could cut it to 1/2 c and not miss any sweetness)
4 eggs beaten
1 20 oz can crushed pineapple
8 slices of cubed bread

Directions

Preheat oven to 350 degrees. Beat together butter and sugar; add eggs, mix well. Fold in pineapple and bread cubes. Pour into a casserole dish. If you like a nicely browned top on your baked casseroles, then use a fairly shallow dish for more top diameter. If you don't care, I don't care what size casserole dish you use. Grease the pan and bake until golden brown. Depending on the depth of your pan, start with 30 minutes and judge.
