12 Days of Christmas Recipes: #6 Even You Can Do Caramel Corn

Something for you to do on a Sunday…as if you don’t have anything else going on! After you do the laundry, clean your house, make food, finish decorating, write your Christmas cards, walk the dog, and watch the football game you can make this super-easy-unbelievably-yummy-makes-Garrett’s-a-little-nervous-caramel corn.  Oh, what the heck… make this first.  It doesn’t take long and you could eat it all day while you do all the other stuff.

On the 6th day of Christmas my true love gave to me... Caramel Corn!

  •  12 cups of O Ke Doke popcorn already popped in the chip aisle (plain white if you can, butter yellow if you can’t, cheese if you are brave and adventurous) If you decide to pop your own popcorn, add ½ tsp salt to the sugar melting mixture, the prepared O Ke Doke has plenty already.  I don't pop my own because it takes too long to pick out the "old maids" and I hate broken teeth.)

In the microwave, melt  for 3 minutes:

  • 1 stick of butter
  • ¼ c corn syrup (the clear stuff)
  • 1 c brown sugar (dark or light, whatever you have)
  • To the melted caramel, add ½ tsp baking soda and micro another 30 sec.

While the caramel is melting, put popcorn into a clean, brown paper grocery bag or a very large bowl if you don't have a bag.  Pour finished caramel into the bag or bowl.  Stir with a wooden spoon and then shake the bag “violently”.  Pour out onto a jelly roll pan with waxed paper or put the wax paper right onto the counter and pour it out onto that.  Spread thin and let cool or start eating immediately…if you can’t wait. Lick the bowl.  No need to put it into anything to store because there won’t be any to store. (If you do have willpower, use an airtight container)
