We're proud to welcome celebrated brewer Jérôme Rebetez, owner of Switzerland's BFM (Brasserie Des Franches-Montagnes) to The Bavarian Lodge! BFM is a small artisanal brewery in Jura, Switzerland whose products, including barrel-aged beers, have drawn international acclaim. Founded in 1997 by Jérôme Rebetez, this tiny brewery has rapidly become known for making beers that stretch traditional beer style guidelines and use unorthodox ingredients. Meet Jerome, learn about his passion for barrel-aging beers and using exotic ingredients, and enjoy three rare BFM beers!
BFM from cask: "La Douze," Jérôme's spin on the classic German Göse bier. Made with flowers of salt of Guérande, wheat, pale malt, spices, and lactobacillus for a crisp, bright sourness. (5.5% ABV) On Draught: "Spyke & Jérôme’s Cuveé Délirante" A collaboration with Terrapin Brewing, this is a big beautiful rye barley wine aged in rum barrels. This glorious full-bodied collaboration has a tart woody aroma, a citric tartness, with notes of fresh cranberries and sweet caramel, finished of with plenty of oaky rum. (12.3% ABV). "La Tarry Suchong" Made with Chinese Lapsong Tary Suchong tea leaves that are smoked over beech wood. Amber in color, with an aroma of smoke and caramel. 6:00 - 9:30 p.m. • 5 Rabbit Huitzi Untapping

Cleetus Friedman of City Provisions has been named one of the most influential people in the beer and food business in Chicago. He is known for radical beer collaborations and superb food. He will help unveil 5 Rabbit's latest creation, Huitzi Midwinter Ale, at City Provisions. Huitzi, a Belgian Strong Golden Ale, is brewed with hibiscus flowers, ginger, Thai palm sugar and local Chicago honey. Huitzi is a winter beer that doesn't wallow in the dark cold days of this season. Like its namesake, the Aztec hummingbird god Huitzilopoctli who smashed the winter to allow the sun to return, Huitzi looks forward to the brighter promise of spring. We think of it as a winter cooler. Reservations suggested.

Greg Browne, brewmaster at Mickey Finn's Brewery in Libertyville, guides us through the nuances of beer and its appreciation. Students study several beers and learn exactly what they're tasting and the roles that the ingredients and the brewing process have in forming those aromas and flavors. Price, $25 per person. Topic: Wild Beers. Call (773) 252-7636 for more information. Tickets went on sale on the Monday evening before beer school, first come-first serve until all tickets have been sold. You must have a ticket to attend Beer School.

Join us for a casual afternoon with Jérôme Rebetez, Brewmaster and Owner of Brasserie des Franches-Montagnes (BFM) in Jura, Switzerland. Started in 1997, Jérôme’s brewery has been one of the pillars of the Swiss craft beer renaissance being one of the first to start barrel aging. An afternoon spent with Jerome is not to be missed! We will be sampling a Wooden Cask of St. Bon Chien 2010. A rare and special treat complimented by cheese, charcuterie & chocolates.
