On May 2nd, Urbain Coutteau of De Struise Brouwers will begin an exciting journey through the Midwest hosted by Tyler Trotter and Lori Beck of Louisville Beer Store & Holy Grale in Louisville, Kentucky. His itinerary includes, among many adventures, 4 collaboration brewdays & the Kentucky Derby. Please welcome Urbain on his first Midwest visit and join us at this meet & greet! This Monday, we are very pleased to announce the official launch of Evil Twin Brewing in the Midwest. We will be featuring all five ofthe first Evil Twin beers to hit the states starting at 6:00 p.m.

Soft DK - 10.4% Imperial Vanilla Stout, draft
Disco Beer - 10.5% ImperialIPA/Chardonnay blend, bottle
Yin - 10% Imperial Stout, 1/2 of Imperial Black & Tan, draft
Yang - 10% Imperial IPA, other 1/2 of Imperial Black & Tan, draft

Evil Twin Brewing is the brainchild of Jeppe Jarnit-Bjergsø. An avid beer geek since 1997, Jeppe began home-brewing in Copenhagen, Denmark in June '03. His first foray into the commercial craft beer scene commenced in September '05, when he opened the now world-famous bottle shop Ølbutikken in Copenhagen. The reputation of Jeppe & his shop grew quickly, and myriad side projects began (including his collaboration with Cantillon on the Blåbær Lambik- one of this most highly regarded, highly sought-after lambics in the world). Evil Twin Brewing is Jeppe's latest venture, and is the culmination of the vast knowledge, experiences, and relationships he's built over the years.

Join brewmaster, Iain Wilson, in the brew house for our IPA for May tapping. C4 IPA is an explosively hoppy West Coast IPA brewed with Crystal, Cascade, Columbus and Centennial Hops.

7:00 - 9:30 p.m. Stone 2011 Russian Imperial Stout debut and Artisan Cheese Pairing

Blokes & Birds is pleased to announce they will be the first drinking establishment in Illinois to have a draught handle of 2011 Russian Imperial Stout by Stone Brewing Co. Pints of the highly sought-after brew will be available for $9 each starting on May 2. Stone Brewing Co. Ambassador Aaron Tyrell and Master Fromager Coleen Graham will lead an eight course beer and cheese pairing event on May 2 as well. This tasting includes Stone Brewing Co. beer samples, artisanal American cheese pairings and a souvenir Stone Brewing Co. taster glass to take home. The fee is $50 per guest. Limestone will be releasing Brewmaster Ken's newest creation! We will be celebrating this release with a variety of chocolate themed dishes to accompany THE NIBULATOR, a 6.83% Dopplebock that was tasty after brewing, but now after lagering for 2 months (the last few weeks on flavorful Ghanaian Cacao Nibs) it is incredibly smooth. The nibs add a mellow, bittersweet chocolate characteristic that enhances the rich, malty characteristics of this impressive beer. The NIBULATOR starts with a caramel sweetness and finishes with a chocolaty creaminess. There isn't a hint of bitterness in this lager! This easy drinker pairs well with most deserts, contrasts spicy foods like a dream and is so smooth that it can stand alone as a strong session brew! Chef Darren is planning some incredibly tasty treats for this evening to compliment THE NIBULATOR, so come by for some great food and great beer! We will have live music from Steve & Bobby K. starting at 7, specials on the NIBULATOR and will have a few raffles for growlers throughout the evening!

On the first Tuesday of each month from 6 pm to 8 pm, we will be conducting an in-depth tour and tutored tasting at our brewery. Classes meet in the State Room, on the second floor of our restaurant. We are limiting this to 25 "students" each month and seats can be reserved, for $15 per person, by calling (312) 755-1677. Classes conducted by our Brewmaster include brewery tour, discussion of beer styles, history, and flavor profiles, light snacks, and tastings of every beer currently on tap.

Join us for a very special tapping of a traditional wooden gravity-fed cask of Aecht Schlenkerla Fastenbier from Bamberg, Germany! Dark hazy amber smoked lager made available during Lent, and only on draft. This is the first time this rare and celebrated beer has ever made its way overseas in a wooden cask. It exhibits a bold smoke aroma and a Noble hop note in the nose. Medium-bodied, yet highly drinkable, with a nice malt sweetness. A rare treat for fans of smoked beers, and an even rarer treat in its highly sought-after cask-conditioned form. This special wooden cask will be tapped on the bar in our pub room just after 6:00 p.m. The glorious elixir inside will be available to all guests (21 & over), seated in both in the pub and dining room, while supplies last.
