Yes, an easy appetizer that will impress both food snobs and health nuts does exist. It's called Mango Salsa.
Every bite is wonderfully complex, bursting with fresh flavors--sweet, sour, citrus-y and spicy.
I started with Ellie Krieger's recipe but then jazzed it up. The result is not only delicious, but it's really pretty with it’s palette of bright colors.
The fact that's it's healthy is another bonus.
I served the Mango Salsa with tortilla chips (not so healthy) at a dinner party. The next day I served it on the side of some grilled salmon.
Also, with the price of limes these days, you can substitute the fresh lime juice for fresh lemon juice.
1¾ cups, mango, diced
½ cup red onion, diced
1/2 cup cucumber, diced, peeled and seeds removed
½ cup cilantro leaves
1 T. jalapeño (or more to taste), diced
1 t. sugar
1 T. fresh lime or lemon juice
1 T. white or apple cider vinegar
salt and pepper, to taste
Mix all ingredients together and place in refrigerator for 2-4 hours. Stir and serve as desired.
