The one dessert that's delicious, healthy and can be whipped up in no time flat

These No-Bake Energy Bites are what's missing from your life.  They're easy-breezy to make,  absolutely delicious, and get this--they're healthy!

What more could you possibly ask for in a dessert recipe? (OK, they could be slightly more attractive, but that could be said for a lot of us.)

The recipe came courtesy of Pamela Adler, a fabulous cook as well as human-being. In full disclosure, she's my husband's daughter.  However, if you knew Pamela, I guarantee, you'd feel exactly the same.

She miraculously whipped up the Energy Bites up in no time when we visited her and husband in sunny, warm Tucson, Arizona.

Hopefully (PLLLLEASE!), it will also be sunny and warm here shortly. Meanwhile, I have a craving for these yummy Energy Bites and will make them very soon.

I plan to gobble them up and not feel one bit guilty when I do.

No-Bake Energy Bites
(makes 18-20 bites)
 1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flax seed
1/2 cup mini chocolate chips
1 tsp vanilla
 Mix all ingredients in a medium bowl until thoroughly incorporated.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls and enjoy!  Store in an airtight container and keep refrigerated for up to 1 week.
