I used a lemon cake mix to make them, but I've heard that other cake mix varieties work well too.
Warning: The dough is very sticky, but the simplicity of the recipe makes it worth the effort.
The Easiest Cookies You'll Ever Make
1 box cake mix
1 8-ounce container Cool Whip, thawed in the refrigerator
½ cup powered sugar
Heat over to 350 degrees.
In large bowl, beat eggs. Stir in Cool Whip until combined. Pour in cake mix and blend well. Refrigerate batter for 30 minutes. Using a teaspoon, form into balls and roll in powered sugar.
Place each ball on cookie sheet covered with parchment paper. Bake about 14 minutes or until slightly golden around the edges. Cool ten minutes before removing from pan. Makes about four dozen cookies.
