 Two-Ingredient Chocolate Mousse for Valentine's Day

Hey, Valentine's Day is almost here. Want to fool your special someone into thinking you're a gourmet cook? Here's your opportunity.

Honestly, it just doesn't get any easier than this. Not  unless you buy a box of candy from Fanny May or Godiva.  But you wouldn't score nearly as many points. Plus, you'd probably have to stand in a long line to get it.

The recipe below is  adapted from one which originally appeared in Woman's Day Magazine.

You can use the mousse as a a pie filling simply by putting into a prepared crust and topping it with whipped cream.

Either way, don't skimp on the chocolate, or you'll lose that deep, dark, sinfully rich chocolate flavor.

Two-Ingredient Chocolate Mousse

15-oz. container part-skim ricotta cheese
1/2 lb. semi-sweet chocolate

1. Place the ricotta in a microwave-wave bowl and microwave on high, stirring every 20 seconds, until no longer cold, about 1 minute. Transfer to a food processor and puree until smooth.

2. Place the chocolate in another microwave-safe bowl and microwave on high, stirring every 15 seconds, until the chocolate is melted and smooth, about  one minute.

3. Add the warm chocolate to the food processor and puree until fully incorporated and very smooth.  Spoon into cups or glasses and chill at least 2-3 hours.
