3 Cups Unbleached Oat Flour
3 Cups Brown Rice Flour
1-1/4 Cup Carob Chips
Additional Large Carob Chips for top of treats
2 tsp. Vanilla Extract
2 Cups Water
Preheat the oven to 350◦
The carob chips we use are the ones that look like flattened chocolate kisses. In this case put the large chips in a food processor for just a moment to chop them into small pieces, like chocolate chips. Do not turn them into a powder.
Put the flours, eggs, vanilla and water in your mixer with the paddle mixing blade. If your mixer does not have a paddle blade, mix in a large bowl with a large spoon until dough forms.
Add the carob chips and mix just until combined.
Scoop 1” balls of dough onto a parchment lined cookie sheet and flatten with the bottom of a drinking glass. Dip the base of the glass periodically in the oat flour to keep dough from sticking to the glass.
Press one of your additional large carob chips into the center of each cookie (if using small chips, just sprinkle a few in a small mound in the center of each cookie)
Bake for 15 -20 minutes (depending on your oven)
Treats are done when they are crisp and the carob in the center of the treat is melted. (Be careful not to scorch the chip(s) in the center of each treat). Let the treats cool and place in a sealed container.
Leave a few out to treat your furry family member and put rest in the freezer to keep them fresh and remove them as needed.
