RED CUP BITES: GRILLED AVOCADOS

Haute-Grilled-Avocados

I haven't tried it yet, but I saw a delicious recipe for grilled avocados last week and I can't stop dreaming about making this. It looks simple and screams SUMMER DELICIOUS. Warm avocado, fresh salsa, and some chips...YUM! I suggest using lots of lime.

Ingredients

  • 2 ripe, Fresh California Avocados
  • 2 Tbsp. fresh lime or lemon juice
  • 1 1/2 Tbsp. olive oil
  • Seasoned salt to taste
  • 1/2 cup fresh salsa, optional for half shell version

Instructions:

  1. For Grilled Slices:
  2. Cut avocado in half, seed, peel, and slice.
  3. Drizzle with fresh lime or lemon juice and brush lightly with olive oil.
  4. Gently place slices on grill over hot coals for 2 minutes on each side.
  5. Season with salt to taste.
  6. For Grilled Half Shells:
  7. Cut avocado in half and remove seed.
  8. Drizzle with fresh lime or lemon juice and brush lightly with olive oil.
  9. Gently place cut side down on grill over hot coals for 2-3 minutes.
  10. Season with salt to taste.
  11. Optional: fill with fresh salsa or your favorite fresh ingredients.
RED CUP COCKTAILS: WATERMELON MARGARITA

watermelonmargarita-lWhat should be in your red cup this weekend? Watermelon Margaritas!

Ingredients
  • 2 teaspoons sugar
  • 1 lime wedge
  • 3 1/2 cups cubed seeded watermelon
  • 1/2 cup tequila
  • 2 tablespoons sugar
  • 3 tablespoons fresh lime juice
  • 1 tablespoon Triple Sec (orange-flavored liqueur)
  • Lime wedges or watermelon balls (optional)

Preparation:

1. Place 2 teaspoons sugar in a saucer. Rub the rims of 6 glasses with 1 lime wedge; spin rim of each glass in sugar to coat. Set prepared glasses aside.
2. Combine watermelon and next 4 ingredients (through Triple Sec) in a blender; process until smooth. Fill each prepared glass with 1/2 cup crushed ice. Add 1/2 cup margarita to each glass. Garnish with lime wedges or melon balls, if desired.
