Chipotle Lime Chicken Tacos
Made from the left over chicken from the Chipotle Lime Chicken with Black Bean Rice recipe yesterday.

So for dinner tonight, I will be having the leftover chicken from last night's meal. All you have to do is shred the chicken from the bone if you did not slice it up last night, and heat in the left over chipotle sauce. If you do not have much left over, just follow the recipe and make another batch. I tend to double any sauce I am making when it can double as something for leftovers.

Other items you will need:
Chihuahua cheese
Spring/green onions
Corn Tortillas
Leftover chicken
Leftover black bean rice

Heat the sauce in a skillet, add the chicken, and toss until the chicken is heated. Steam or heat a couple of tortillas per taco, fill with a little cheese, chicken/chipotle mixture, a sprinkling of the cilantro/onion mixture, and top with some Greek yogurt if you would like. Plate with the leftover black bean rice and you are done.

The amount of chicken you have leftover will determine the number of tacos made as well as how much filling you put in each one. One chicken quarter should make about 4 tacos.
