Lamb Kabob Sandwich

After making the bruschetta this afternoon I decided to marinate the rack of lamb I took out and make kabobs and a demi glace. I used the kabobs to make sandwiches for dinner and it was DELICIOUS!

1 lb of lamb meat (use stew meat and save your rack of lamb unless you are cleaning out your freezer)
1 teaspoon of dried mint
1 tablespoon of dried rosemary
1 teaspoon of dried oregano
2 pinches of kosher or sea salt
1 tablespoons of lemon juice from concentrate (or the juice of 2 lemons)
1/2 cup extra virgin olive oil

Marinate meat for at least 2 hours. Skewer and broil for about 15 minutes or until it is done to your liking, turning over about halfway through cooking. Set aside and cool until you are ready to assemble the sandwiches.

Tzatziki Sauce:
1 small container of plain Greek yogurt
2 cloves of garlic, minced
1/2 teaspoon of dried mint
1/4 teaspoon of dried oregano
1 pinch of kosher or sea salt
1/4 cup finely shredded cucumber

Blend together and refrigerate until ready to assemble sandwiches.

To assemble sandwiches all you need is your favorite pita pockets, mixed greens, tzatziki sauce and lamb. Layer in that order in your pockets, serve and enjoy the silence as the mouths are too busy eating instead of talking. Should be enough for 4 sandwiches (8 pita pocket halves).
