Greek Chicken Wrap with Lemon Basil Pasta Salad

What can you do with the leftover Greek Chicken from the other night?? This is easy! Makes some homemade Tzatziki sauce, grab some spinach or whole wheat tortilla wraps (or you can use whole wheat pita pockets), shredded romaine or a handful of mixed greens, some thinly sliced tomatoes, red onions and wrap. Serve with a side of Lemon Basil Pasta Salad and you are golden. Isn't that easy? I came up with the lemon basil pasta salad after falling in love with a version of this salad at Macy's food market in the basement of the State Street location. It is a great salad to have as a side at a BBQ or with sandwiches that is light and summery. I hope you enjoy this meal as much as the girls in my office did. I have been using the girls as my food critics lately when coming up with new recipes.

Tzatziki sauce:
You will need 1/4 cup finely shredded cucumber with the skin still on. Squeeze out the excess water from the cucumber. You can use this in a glass of water to give it that crisp fresh flavor. Place the shredded cucumber in a bowl and ass to it 2-3 small cloves of garlic crushed, 1/4 teaspoon of dried oregano crushed, 1/4 teaspoon of dried mint crushed and a pinch of sea salt. Blend well and refrigerate till ready to use.

Slice chicken thinly. Take one tortilla, spread 1-2 tablespoons of the Tzatziki sauce in the middle, place desired amount of sliced tomatoes, onions, lettuce and chicken then roll. I like to wrap mine like a burrito so when it is sliced in half nothing falls out the bottom.

Lemon Basil Pasta Salad:
Lemon Basil Pasta Salad
You will need a 1/2 pound of any kind of shaped pasta cooked al dente. In a bowl add the juice of one lemon and the zest, a pinch of sea salt, pinch of fresh cracked black pepper, 2 to 3 Roma tomatoes seeded and diced, 8-12 chiffonade basil leaves and 2-3 tablespoons of extra virgin olive oil. Toss with the pasta and refrigerate for at least an hour or overnight. Before serving you can add about 1/4 cup freshly grated mozzarella cheese and mix well. This makes 4-6 servings depending on the type of pasta you use.
