Chicken Breast with Caramelized Pearl Onions

I am starting to experiment with cooking lately. A lot of it is due to lack of time but the need to eat and other times it is because i am tired of making my favorite things. This recipe I came up with after having shopped at Aldi. Who knew you could go shopping there for a weeks worth of groceries for under $20!?!?!

What you will need for this recipe is:
1 large boneless skinless chicken breast sliced in about 1/4 inch thick rounds
Sea salt
Fresh ground black pepper
1-14oz can of diced, peeled, low sodium tomatoes
2 cloves of garlic, smashed and minced
6-8 pearl onions
Extra virgin olive oil
Parmesan cheese
Penna Pasta

First rinse, slice and pat your chicken dry. On a plate, mix 2 handfuls of flour with 1/2 teaspoon of salt and 1/2 teaspoon of ground pepper, place the chicken in and coat the chicken.

In a saute skillet add 1 table spoon of olive oil and butter and heat on medium high. once you see the butter has melted and starts to bubble, place the floured chicken in the skillet. You might have to cook in 2 or 3 batches depending on your skillet. Cook the chicken till it is golden brown, place on a plate with a paper towel to drain. While cooking the chicken, peel the pearl onions and cut into 1/4's. Once the chicken has been cooked add the onions to the oil. smash and mince the garlic and add when you see the onions are starting to turn brown on the edges, cook for about 2-3 minutes and then add the can of tomatoes. Saute the mixture for about 5 minutes then add 1/3 can of water and add the chicken to the sauce to finish cooking.

Cook pasta as directed till al denta, place about 3-4 pieces of chicken on the pasta and add tomatoes and sauce. Sprinkle with fresh grated parmesan cheese and serve.
