Chicken Marbella, complete with bay leaves, prunes and green olives

Cooking Chicken Marbella:

Tonight is Chicken Marbella night. I’ve marinated the chicken overnight, and I’ll pop it into the oven about 5:30. I really can’t imagine how a chicken dish made with prunes, green olives and bay leaves is going to taste. To be honest, it sounds weird.

It's the afternoon after Chicken Marbella night, and I'm happy to report that "weird" can be wonderful. After marinating the chicken overnight, I put it in a shallow baking dish, added the marinade, put brown sugar on top of the chicken, and poured the wine in between the pieces. What could be simpler?

I basted the chicken twice, turned it over halfway through, and then took it out of the oven when the timer went off. Add a salad, a starch (I opted for rice), a green vegetable and some crusty bread, and it's definitely a meal with star quality. Check back to see what I do with the leftover prunes.
