Look in the kitchen! It's breakfast, it's dessert, it's a honey peanut butter and banana smoothie!
Tonight the kids and I wanted dessert. The only options we had were Jelly Bellies from Halloween and well, nope that was it.
I was thinking of some sort of peanut butter/banana combination so possibly the Elvis? Nah, let's take it down a notch. How about a smoothie?
I actually make smoothies all of the time for breakfast. They usually involve fruit, sometimes "hidden" veggies and some sort of non-dairy milk like almond or coconut. I just know you want to come over for breakfast now, right?
Tonight, I wanted to make something more dessert-like (AKA no kale) and came up with this. Here's the super simple recipe.
Honey Peanut Butter and Banana Smoothie
(Serves about 4)
5 ice cubes
2 cups almond milk
2 tbsp peanut butter (can substitute any nut butter)
1 tbsp honey (optional, but hey, it is dessert)
1. Place ingredients in blender in the above order.
2. Blend at a high speed until smooth.
Franky will drink any smoothie. Spinach and strawberries? He's on it. Lilia is way more selective. They both had every last drop of this and asked for seconds. It tasted like ice cream, but is probably a little healthier than downing a pint of Ben & Jerry's (although, don't think I forgot about you Vermonster).
