This week is all about the abundance of summer. My mom's tomato harvest is overflowing, so she gave me the equivalent of about 13 tomatoes (cherry/plum/vine-ripened) for our meal plan! And a friend is bringing me back a flat of organic blueberries from vacation, so I can't wait to snack on those (and bake with them). Every year when summer is winding down I feel an intense need to squeeze every last drop out of it, and I'm doing that with food this year, not just in terms of kid activities. The flavors of summer are so fresh and alive, I'm really looking forward to this week's recipes!
Monday: Tomato-basil pasta; roasted cauliflower on the side
Tuesday: Pesto and tomato grilled cheese; oven "fries" and fruit salad on the side
Friday: Dinner out
Saturday: Tomato-zucchini tart; roasted asparagus on the side
Breakfast treat: Blueberry scones with lemon glaze
Dessert for the week: Blueberry slab pie
What are your last wishes for the summer? Some schools have already started, which I find terribly depressing, but we don't start until the last week of the month, thank God. Even if summer isn't technically over until late September, our meals will definitely change once school starts and I am not looking forward to it!
