Don't Miss Your Morning Muffin!

My husband spoils me by buying gifts, I spoil him by making muffins every week--usually banana chocolate chip muffins--his favorite. Chaco (the dog) thinks the muffins are for him. He loves muffins. If you set your muffin down, he'll take it. He has also been known to steal the muffin papers out of the trash can and swallow them in one gulp.


So  in between rationing the muffins out for Joe and I's breakfast so Joe doesn't eat five of them in one day, and keeping them from the dog, I finally have perfected the banana chocolate chip muffins and will share with you. This is one of the tastiest and healthiest muffins you can make:

Morning Muffins


  • 4 ripe bananas
  • 1/4 cup melted butter
  • 1/2 maple syrup
  • 1/2 white flour
  • 1 cup wheat flour/wheat bran/or oat bran
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 teaspoon baking soda
  • Chocolate chips (as many as you want!)


Preheat oven to 350°F. Line muffin tins with paper. Mash the bananas in a bowl. Add all the remaining ingredients and mix well with a wooden spoon. Use 1/3 cup to fill each muffin tin 3/4 full. Bake until a toothpick stuck into the muffins come out clean, 18 minutes in my oven. Place in sealed container or zip lock to keep fresh. Store on the counter.
