Halloween breakfast ideas

Hall-la-looYa, halloween is on a Sunday this year which means the hubs is home and we can spend the day relaxing before the spooks come out. Of course since I have to be festive from A-Z, I will be making a very halloweeny breakfast in the morn.

Here are some ideas!


Pumpkin Pancakes
(4 servings) 

2 cups flour (as always, sub whole wheat!) 
2 tbs granulated sugar 
4 tsp baking powder 
1 tsp salt 
1 tsp cinnamon 
1 1/2 cups milk 
1 cup pumpkin puree 
4 eggs - separated 
1/4 cup melted butter 
Sift together dry ingredients. Combine milk, egg yolks, butter and pumpkin puree. Stir into dry ingredients until just blended. Beat egg whites until stiff and fold into batter. Pour onto hot, oiled griddle, about 1/3 cup at a time. Cook until tops bubble and turn and cook other side.
Easy Boo Pancakes

(serves 6
pancakes) 

1 cup white flour (or half and half with whole wheat) 
3 tablespoons white sugar 
2 1/4 teaspoons baking powder 
1/4 teaspoon salt 
2 1/2 tablespoons butter 
3/4 cup water or milk
Large, firm blueberries, rinsed
Sift flour, sugar, baking powder, and salt together into medium mixing bowl. Melt 2 1/2 Tbsp butter in frying pan until melted then pour in a small bowl, add water or milk. Mix well. Stir liquid mixture into the dry ingredients until it is thoroughly moistened. Spoon into irregular shapes in the pan and add two blueberries per pancake to make "eyes". (Push the blueberries down the the bottom of the pancake). When it the batter starts to bubble, carefully flip until golden brown. Boom, ghosts!
Simple Spooky Toast
Toast slices of bread and use halloween cookie cutters to make fun shapes. Top with orange and/or blackberry jam. Viole!

A drop of yellow food coloring in strawberry jam will get the job done.
