Need to chill on the produce

The weekly Andersonville farmer's market is today and as I gathered up my lucky shopping bag and started to hatch my plan it dawned on me that I still have a fridge full of produce from last week. I guess it has to do with being prettier than flour and milk, but there's just something about the gleam of eggplants and their brethren that sucker me in. I don't even eat it all! And where am I supposed to put all this stuff?

How about in soup.
Produce I already had:
- Bag of carrots
- A sweet potato
- 2 yellow potatoes
- An onion
- 1/2 a zucchini
- 2 bell peppers (one red, one orange)
- 1 yellow squash
And luckily I also had:
- Butter
- 2 veggie bouillon cubes
- Salt to taste
First, I peeled, chopped and boiled the first three items and added two veggie bouillon cubes to make a broth. Then I sauteed the onion and 1/4 of each bell pepper in butter, then combined the mixtures in the blender. Voile, soup:

Then I chopped the rest of the peppers, squash and zucchini together and put them back in the fridge for  . . . veggie lasagna! I'll make that tomorrow.
