This recipe is not only 280 calories per serving, but simply very tasty and really easy to prepare. If you want to save some time, purchase a roasted chicken from your local grocery store and feel free to purchased canned, seasoned chopped tomatoes if you don't want to roast your own. I also make my own corn salsa, you may buy fresh refrigerated salsa and stir in a can of low sodium canned corn. Top off the recipe by using an all natural plain Greek yogurt which is an excellant source of protein and calcium. This recipe also contains 38 grams of protein and 17 grams of fiber. Enjoy!
