Roasted Chicken Chili Recipe!

RoastedChickenChiliThis recipe is not only 280 calories per serving, but simply very tasty and really easy to prepare.  If you want to save some time, purchase a roasted chicken from your local grocery store and feel free to purchased canned, seasoned chopped tomatoes if you don't want to roast your own.  I also make my own corn salsa, you may buy fresh refrigerated salsa and stir in a can of low sodium canned corn.  Top off the recipe by using an all natural plain Greek yogurt which is an excellant source of protein and calcium.  This recipe also contains 38 grams of protein and 17 grams of fiber.  Enjoy!  Please email me if you have any questions and feedback is always appreciated!

 

Ingredients:

1 roasted chicken; whole, then cut up

1 cup of black beans, rinsed

1 cup of corn salsa

1/2 cup cilantro, chopped finely

1 can kidney beans, rinsed

1 can butter or cannellini beans, rinsed

2 cups roasted tomatoes, chopped

2 cups chicken broth

1 tablespoon chili powder

1 tablespoon smoked paprika

1 tablespoon peppered chipolte

1 tablespoon chinese spice powder

1 tablespoon garlic powder

1 tablespoon oregano

Method:

1.  Using a crockpot, shred the chicken and add all other ingredients.

2.  On low setting, allow to cook for 3-4 hours.

3.  You can top the recipe off with shredded lettuce, weight watcher cheese and yogurt.
