Diabetic Recipe: Moroccan Couscous Salad

2 cups couscous, cooked and fluffed with fork, cool

1 bunch scallions, finely chopped

1 green pepper, chopped; seeds removed

1/2 english cucumber, chopped

6 ounces garbanzo beans

2/3 cup golden raisins

1 oranges; segmented, chop and reserve juices

Dash of black pepper

3 mint leaves, chopped



1.  In a large bowl, fluff the couscous.

2.  Add all ingredients and mix well.

3. Serve it up on lettuce leaves.

Chef Notes:  You may use bulgur in place of the couscous.
