Super Bowl Appetizer 2013: Hot Artichoke/Spinach Dip

This is a very simple, easy great tasting recipe, low fat version, to get your guests ready for Super Bowl Sunday! Remember to use jarred artichokes which are packed in water, not oil, to keep the calorie count down. This recipe makes 4 servings, double it for a bigger crowd! Enjoy!!!

Ingredients:
1-14 ounce canned, quartered artichoke hearts, drain and chop
6 ounces fresh spinach
3/4 cup Hellmann's low fat mayonnaise
3/4 cup fresh grated Parmigiano-Reggiano cheese
2 garlic cloves, finely chopped
Pinch of crush red pepper flakes
Dash of salt and pepper

Method:
1. Preheat your oven to 400 degrees.
2. In a medium bowl, combine the artichoke hearts, spinach, mayo, cheese, garlic and crushed red pepper flakes. Add a dash of salt and black pepper.
3. Place the mixture into an 9x9 baking dish and bake for 10 minutes.
4. For added color, broil the dip until it is brown and bubbling, usually about 2 minutes. Check during broiling to avoid burning the mix.

This can be served with toasted baguette slices or tortilla chips.
