Wake Up for This: Fluffy Stuffed Fall French Toast

Some people live for the summer months. Others love the snowy cold of winter. My favorite time of year has always been fall. In part because I get to celebrate the birth of me (who doesn't love a birthday celebration??), but mainly because of the change that fall ushers in - crisp blue skies dotted with the beautiful oranges, browns, and reds of leaves on trees, cozy sweaters, football games, and heartier foods.

Speaking of heartier foods, nothing goes better with a rainy fall morning than this fluffy stuffed fall french toast.It is completely gluten free and dairy free, but satisfies that craving of the traditional french toast you remember as a kid. The recipe is actually two dishes in one: french toast and caramel cream cheese filling. The french toast is just as delicious without the filling. I've made this recipe, garnishing the french toast with a little maple syrup and an apple cinnamon compote. The filling stands alone as a tasty caramel apple dip. Slice up some honey crisp apples and dip to your heart's content. When you put the two together for the fluffy stuffed french toast.....yum. May I have another piece please?

Fluffy Stuffed Fall French Toast

  • 12 slices gluten free bread - Udi's Soft & Hearty Whole Grain bread or Schar's Gluten Free Parbaked Baguettes work well here
  • 1/4 cup almond flour
  • 1 cup almond milk
  • 1 tsp vanilla extract
  • 1 tbsp brown sugar
  • 1/2 tsp cinnamon
  • dash of salt
  • 3 eggs

Filling (Dairy Free Caramel Apple Cream Cheese Dip)

  • 1 pkg. (8 oz.) Tofutti or Galaxy brand non-dairy cream cheese
  • 1/4 c. brown sugar
  • 3/4 cup dairy free caramel
    • 1/2 packed cup brown sugar
    • 1/4 cup almond milk (or other non-dairy milk alternative)
    • 2 tablespoons Earth Balance
    • Pinch salt
    • 2 tsp vanilla extract
  • 1 tsp. vanilla extract
  • 1/4 cup chopped roasted peanuts

Start by preparing the caramel and filling. For the caramel, mix the brown sugar, almond milk, Earth Balance, and salt in a saucepan. Cook over medium heat, whisking for 5-7 minutes. Mixture will thicken. Add vanilla extract, cook for an additional minute, then remove from heat and let cool. Once caramel has cooled, add filling ingredients and mix well. Set aside for slathering on french toast slices.

For the french toast, heat a large pan or skillet over medium heat. Preheat oven to 350 degrees. Spray cooking spray or melt 1 tbsp Earth Balance to coat pan. Set aside bread slices or sliced baguette slices. In a shallow dish or large bowl, combine almond flour, almond milk, brown sugar, vanilla extract, cinnamon, and salt - whisking until smooth. Dip each slice of bread into liquid mixture until both sides are fully coated, then place into pan. Let cook until light brown on each side, flipping in between. Transfer to a plate. Spread filling onto 1 side each of two slices of french toast. Place slices on top of one another (like a sandwich) and bake in a preheated oven for 5 minutes. Transfer to a serving plate. Finish with drizzles of maple syrup, fresh fruit, or just enjoy!
