Italian Sausage and Beans Dinner

We've all been there. Staring at the fridge at 5:30pm with hungry kids swarming. What to make for dinner that is easy, fast, and won't break the calorie bank? This recipe from Cooking Light is very satisfying and ready in 10 minutes, no kidding. The seasoning of the turkey sausage along with the basil, oregano, and tomatoes make a tasty broth for the beans. Pair with some toasted garlic bread, to soak up every last bit of the sauce from your bowl.

I enhanced Cooking Light's recipe by adding kidney beans and spinach, giving it some green and a little more fiber.

Italian Sausage and Beans (Gluten Free and Dairy Free)

1 20 oz package Jennie-O Sweet Italian Turkey Sausage (casings removed)
1/2 cup chopped green or red bell pepper (whatever you have on hand)
1/2 cup chopped onion
2 cloves minced garlic
2 tbsp olive oil
1 tsp oregano
1 tsp basil
2 cups spinach
1 19 oz. can cannellini beans or white Northern beans, drained (Bush's is gluten free)
1 19 oz. can red kidney beans, drained
1 14.5 oz. can diced tomatoes, undrained

Heat a large skillet over medium high heat. Add the olive oil, onion, bell pepper, and garlic. Saute until onion is translucent. Add the sausage and cook until browned and crumbly. Add spices, beans, and tomatoes and reduce heat to a simmer for 5 minutes. Toss in spinach and continue cooking until spinach wilts. Serve with gluten free garlic toast.

Gluten Free Garlic Toast

4 slices Udi's Multigrain Bread
1tbsp Earth Balance Shortening
1 tsp garlic powder
1/2 tsp dried parsley
1/4 tsp basil
Sea salt

Heat oven to 400 degrees. Slather Earth Balance on each of the 4 slices of bread. Sprinkle garlic powder, parsley, basil and salt on each slice. Place in oven for 10 minutes until toasted and golden brown.
