Mid-week Menu: Ham it up with Creamy Pasta Shells with Ham, Mushrooms, and Peas

Anytime I bake a ham, there is the issue of leftovers. My family will gladly eat leftovers, but ham can get boring after a few days. Day 1 - ham sandwiches, day 2 - ham and cheese omelets...you see where this is going. Ham again?  When I'm looking for something quick but a little unexpected with ham, I go to my Creamy Pasta Shells with Ham, Mushrooms, and Peas recipe. You can boil the pasta and chop the ingredients the night before for quick assembly after work, or do your chopping/prepping while the pasta is cooking  for a weeknight meal in 30 minutes or less.

The full-fat coconut milk gives the sauce its creaminess, but the garlic does an amazing job of masking the coconut flavor. So, you end up with a rich gluten free and dairy free cream sauce.

Creamy Pasta Shells with Ham, Mushrooms, and Peas

16 oz gluten free pasta shells (Tinkyada is my favorite)
2 tbsp Earth Balance
1/2 cup chopped onion
10 oz. mushrooms, chopped
2 cups diced, cooked ham (Hormel, Smithfield, Applegate Farms, Honeybaked, Sugardale, and Hillshire Farms are just a few gluten free brands - always be careful of glazes which may contain hidden gluten)
1 tbsp brown rice flour
1 14 oz. can coconut milk (full fat)
2 tbsp Galaxy brand dairy free cream cheese
1 cup frozen peas
1/2 tsp garlic powder
salt and pepper to taste

Boil water for pasta. While pasta is cooking, melt Earth Balance in a large saucepan over medium high heat. Add onion and mushrooms. Saute until onion is translucent and mushrooms are soft. Add brown rice flour, to coat onion and mushrooms. Add frozen peas, cooked ham, coconut milk, and cream cheese, blending togethe. Add garlic powder.  When pasta is cooked, drain and add to sauce. Mix to incorporate sauce and vegetables. Season to taste with salt and pepper and serve.
