Light and Lemony Chicken Salad Sandwiches

Each Sunday night, our family gathers to watch the Food Network's Next Food Network Star. We were originally rooting for my high school friend, Orchid Paulmeier. Now that she is no longer a contender, we have been cheering on our other favorite and local 'sandwich king', Jeff Mauro. On last week's episode, he committed a cardinal sin in the Iron Chef  kitchen stadium by using store-bought mayonnaise for all three of his sandwich entrees.  One of the celebrity judges, Giada de Laurentiis, gave him a great tip to add a little lemon juice to mayonnaise.

My humble kitchen is a far cry from Kitchen Stadium, but I took Giada's advice by adding a squeeze of lemon juice into the chicken salad recipe below. Yum! I add a few slices of the first ripe tomato from our garden for good measure. This light lunch screams summertime.

Lemony Gluten and Dairy Free Chicken Salad

1 lb chicken, cooked and diced
1/4 cup celery, chopped
1/4 cup red delicious apple, chopped
1/4 cup golden raisins
1/4 cup toasted walnuts, chopped
2 heaping tablespoons Hellman's Real Mayonnaise
juice of 1/2 lemon (2 tsp)
1/4 tsp paprika
salt and pepper to taste

Mix all ingredients together and refrigerate until chilled. Spoon onto crusty gluten free french bread (Deerfield's Gluten Free baguette is my favorite) and garnish with fresh lettuce and tomato.
