As mothers, we are always looking for snacks that pack a little more nutrition in them while still being kid-friendly. A friend passed a granola bar recipe along to me that her kids loved. I did a little gluten and dairy free makeover and turned out a yummy, grab-n-go snack for the family to enjoy while we are out and about. The surprise ingredient? Quinoa Flakes. It does the job for traditional oats, which I stay away from, while providing a great source of balanced protein and iron.
I chose to add some flaked coconut, golden raisins, walnuts, and chocolate chips. Much like my gluten and dairy free smoothie recipe, I change up the ingredients depending upon what nuts, seeds, and dried fruits spark my interest that day (or what I have on-hand in my pantry). Mix in whatever floats your boat. There are no rules.
Grab-n-go Gluten Free Granola Bars
2 cups quinoa flakes
1/2 cup millet flour
1/2 cup brown rice flour
1/2 tsp xanthan gum
1 cup brown sugar
1/2 cup honey
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1 tsp sea salt
1 tsp vanilla (McCormick's brand is gluten free)
1/2 cup Ghirardelli Chocolate Chips
1/4 cup Angel Flake coconut
1/4 cup golden raisins
1/2 cup chopped walnuts
Preheat oven to 325 degrees. Mix all ingredients and press firmly into greased, 11 x 13 pan. Bake for 20 minutes or until edges are browned. Take
out and let cool entirely. Cut into strips and store in sealed container or snack-sized bags.
