Margaritas Anyone? Gluten Free and Dairy Free Cinco de Mayo

Cinco de Mayo is upon us. Are you looking for a fast and fresh way to celebrate? Try fish tacos with black bean salad. Using tilapia or a similar flaky, white fish is a perfect way to create a Mexican-inspired meal that is light enough to still leave room for a tangy Margarita. Remember, the better the taquila the easier the hangover. Que te diviertas!

Tilapia Fish Tacos with Corn Tortillas

Backyard Margaritas

Tilapia Fish Tacos with Corn Tortillas
1 lb. flaky, white fish (tilapia fillets work well)
1 tbsp plus 1 tsp olive oil
1 tsp apple cider vinegar
1 clove garlic, minced
1 tsp dijon mustard (Emeril's, French's brands are gluten free)
1 tsp lime juice
1/4 tsp dried parsley
1/4 tsp dried basil
Sea salt and pepper to taste
Corn tortillas (Mission brand are gluten free)
Red cabbage, shredded
1 avocado, cut into chunks
Cilantro for garnish

In saute pan over medium heat, add 1 tsp olive oil. Place tilapia fillets in pan until fish turns white and starts to flake. In a bowl,  combine remaining olive oil, vinegar, garlic, dijon mustard, lime juice, parsley, and basil. Whisk until combined. Pour over cooked fish. Add salt and pepper to taste. Warm corn tortillas in microwave or over the stove. To assemble, place some flaked tilapia in the tortilla and garnish with red cabbage, avocado chunks and cilantro.

Black Bean Salad with Peppers
3 ears corn
1 16 oz. can black beans
1/2 cup celery, chopped
1 1/2 cups peppers (red, orange, yellow - chopped)
1 tbsp olive oil
1 tsp apple cider vinegar
1/4 tsp pepper
1 tsp cumin
1/2 tsp salt
2 tbsp cilantro, chopped
1 clove garlic, minced
1 avocado, cut into chunks
Juice of 1/2 lime

Using a knife, cut corn kernels from ears of corn into large bowl. Microwave on high for 2 minutes to cook. Let cool. Drain and rinse black beans. In a large bowl, combine corn, black beans, chopped celery, peppers, olive oil, vinegar, salt, pepper, cumin, garlic, and cilantro. Mix all ingredients together. Gently fold in avocado chunks. Drizzle lime juice over salad. Chill until ready to serve.

Backyard Margaritas

Since it is not that often that I indulge in margaritas (although maybe it should be more often!) I prefer to use really good tequila. 100% pure agave tequila is preferred, but you use whatever you'd like. Cointreau is a gluten free orange liqueur. The limeade recipe comes courtesy of Adventures of a Gluten Free Mom.

12 oz. limeade (fresh lime concentrate)
6 oz. tequila
3 oz. Cointreau

Add
above ingredients to blender and fill blender 1/2 full with ice. Blend.
Add more ice and blend until blender is full. Put a small amount of
tequila on plate. Put salt on a small plate and dip margarita glass into
tequila, then salt. Fill glass with margarita. Squeeze a lime wedge.
Add optional spritz on top of margarita with 100% agave tequila.
