One of my favorite dishes is my Caribbean Baked Sweet Potato. It is a light and refreshing dished that will make your mouth water. The dish requires just a few simple ingredients:

The most work that you will do to prepare this dish is baking the sweet potato and that takes literally little work. I rise my sweet potato punch holes in with a fork put in a baking dish and sprinkle with hawaiian sea salt. I usually baked my sweet potatoes at 350 degrees for about 45 minutes.

About 10 minutes before the sweet potatoes is done, I chopped the pineapples and parsley. Sometime I mix the pineapples and parsley, but you don'd need to. I also do the daunting task of pulling the chia seeds out of the cabinet. Whew, I am so tired. Very, very, tired or not. LOL

When the sweet potato is cooked in according to the texture that I like I split it open and I press it a bit so that the sweet potato is bursting out the skin. I season the sweet potato with a pinch of hawaiian sea salt, lemon pepper and some times I add a little jerk seasoning (if I want a spicy flavor) or a 1 tsp of mango preserve (if I want a sweet flavor) and then I top it with the pineapples and parsley mixture or I top with the pineapples and then the parsley. When that is done I top it with 1tsp of chia seed. If you want to add some more protein you can add chunks of tofu (as shown) or your favorite vegan protein.

You are done!
