Thanksgiving is the time of year that many of us overindulge in all sorts of decadent food as we have a time of thanks with our friends and family. I know that Thanksgiving is a time of year where my mother and I would cook large amounts of food and my specialities were full of carbs and cheese. What did I make? Large pans of macaroni & cheese with at least 7 diferent kinds of cheeses, baked mostaccioli with tons of gooey mozzarella and lasagna that literally melted in your mouth!! Of course we would also have turkey, cornbread dressing, greens and candied yams. I would eat until I thought I would burst and then I would have dessert. Well, those days are over! Like many of you who have decided to embrace a plant based diet, it is important to reinvent some of former favorites dishes and "veganize" them or consider vegan dining options available throughout Chicagoland. If cooking is not your thing or if you are the only vegan in your family, this Chicago Vegan Thanksgiving Guide is exactly what your need. (Do I hear cheering vegans all across Chicagoland???).
