The Perfect Breakfast for a Cold Snowy Day

This is a wonderful recipe for a cold morning. I like to use gluten-free oats from Bob Red Mill's. Oats are technically gluten free but due to the fact that most oats are processed along with gluten-containing foods it's best to be safe and make sure you purchase the gluten-free variety.

Celiacs and gluten-free eaters can still enjoy oatmeal in the morning!

Warm Gingery Oatmeal

Prep time: 5 minutes
Cooking time: 15 minutes
Serves 3

1 cup rolled oats
2 cups of water
1/4 cup raisins (omit if sugar or candida is an issue)
1/4 cup goji berries
1/4 cup sunflower seeds
2 tsp grated ginger
1 TBS agave nectar or yacon syrup

Bring water to a boil. Add oats, raisins, goji berries, ginger and a pinch of salt. Reduce heat to low. Continue cooking until water is absorbed and oats become nice and creamy, approximately 7 minutes. Add sunflower seeds and agave. You can also add rice, soy or nut milk to make creamier. If you don't like raisins or goji berries you can add your favorite dried fruits like cranberries or even low-glycemic dried blueberries.
