What to eat . . . when don't have time (to eat)

Finding time to eat (right) this time of year is really challenging, whether you are a busy shopper or a retail clerk with a 15-minute break. Here are a few suggestions on making your nutrition a priority despite being short on time:

One last suggestion: This quick and easy recipe is taken from Dr. Bieler's Food Is Your Best Medicine. This broth was intentionally used for fasting but I think it makes a great snack, it's warming and packs a lot of nutrition. 


Original Bieler Recipe 
  • 1 pound of string beans 
  • 2 pounds zucchini 
  • A hand full of curly parsley 
  • Enough water to cover your veggies 

Into rapidly boiling water add all ingredients and boil for 10-15 min until fork goes through outside of zucchini, puree using the water you cooked it in and make it the consistency you desire. Now throw it into your thermos and go!
