There are definitely times I'm better off not knowing what's in a favorite dish. I don't want to know that there's three cups of sour cream in the dip I've been snacking on all night at a party; much like I don't really want to know how my mom fries her catfish that makes it so damn delicious. So, when I saw the ingredients to tonight's recipe I was admittedly hesitant. But, I trusted the name and made Bang Bang Shrimp and Pasta anyway.
The first- and only- time I had Bang Bang Shrimp was at (what became) one of my all-time favorite restaurants while on vacation. Almost three years later and my daughter and I are still talking about it.
Since I'd happily eat shrimp every meal of the day, when I saw this picture this morning I knew I had to make it.
Then I looked at the ingredients and I wasn't so certain.
Garlic, sweet Thai chili sauce, lime juice, coconut oil...I was good with all of those, and aside from the angel hair pasta I had everything on hand. The ingredient I questioned was mayonnaise.
Besides the occasional sandwich or chicken/tuna salad, I'm not a huge fan of mayonnaise. The thought of putting it on pasta sounded slightly nauseating.
But, I went with it. (*side note- I use Just Mayo which doesn't contain eggs- so I'm not sure if it altered the taste)
Because I was leery, though, I only made a half portion- and I used rigatoni noodles that I had in the pantry because I was too lazy to go to the store for one item. While I halved all of the ingredients, I ended up adding about a 1/4 cup more of the Thai chili sauce, it was too mayonnaissy-tasting for me.
I have to say, the finished product was really good. My son claimed it was "fantastic!" I don't know that I'd go that far, but I will definitely make it again. You could easily substitute chicken or tofu for the shrimp. Especially if you're using the angel hair pasta, I think you need some kind of protein or veggie for texture.
My advice...don't halve the recipe. It's strangely addictive and around 10:30, those leftovers will be calling for you!
