Remember when microbrews and craft beers were relatively unknown? In a few years we'll say the same about craft spirits. Making a name for themselves against the "big boys" -and beating them in many competitions- craft spirits (namely today's spot) are quickly gaining support. Thanks to a small distillery near my house, I can easily understand the fascination. Remember the name Tailwinds Distilling, you're going to be seeing it everywhere soon.
Yes, right here in Plainfield, you can find award-winning handcrafted rum and blue agave spirits (technically it has to be made in Mexico to be called tequila).
I've been waiting to check out Tailwinds for a few weeks. Since owner Toby, and brother Jamey, are both pilots (hence the name), they're only open on weekends. Even then, call first or check their Facebook page because they're often at shows or competitions.
With frerequent flights & trips to the Caribean and Mexico, Toby developed a fascination for the complex flavors of local spirits. Realizing he couldn't find the same rich quality back home, he & his wife spent years researching and mastering their own recipe.
Thus, in 2012 Tailwinds Distillery was born: fermenting distilling, bottling, labling, and selling small-batches all in one shop.
More importantly they offer tastings and tours! It's only $5 for tastings, and they'll apply the price toward your purchase of a bottle.
So, what are you trying? Right now they offer two types of Blue Agave: silver and "rested" (aged in oak barrels). I will definitely be back for blue agave testings, unfortunately needed to pick up the kiddos.
All that's missing with their rum is a cabana boy to serve it! They use organic molassis to create both their white rum and their Amber rum- aged in French Oak barrels.
As a special treat they've teamed up with one of my favorites, Two Brothers Brewing- not with their beer- but for their fresh roasted coffee.
Their first batch sold out immediately, so they increased production, but don't expect it to last long. Meaning, if you want a bottle (or some for Christmas gifts!) get it now!
You'll find Tailwinds Rum & Blue Agave spirits at several bars around town and in Chicago. Some of us are lucky enough to find them in virtually our backyard.
