So, here is my suggestion: make your own butter from olive oil and tofu. Though you might balk at such a notion at first, trust me: you will get healthy fats from the olive oil, protein from the tofu and a dose of "superfood" power from the maca powder. Olive Oil Butter
Ingredients:
1/2 cup olive oil (or canola)
6 oz. silken tofu
1 tsp. maca powder (root vegetable, known to increase endurance and energy)
1/2 tsp. xanthan gum
Using a blender, puree all ingredients until silky and whipped. Store in airtight container in fridge for up to 2 weeks.
Honey Butter
Ingredients:
1/2 cup canola oil
6 oz. silken tofu
1 tsp. maca powder
1/2 tsp. xanthan gum
3 tbs. agave
Garlic Butter
Ingredients:
1/2 cup olive oil
6 oz. silken tofu
1 tsp. maca powder
1/2 tsp. xanthan gum
1 tbs. minced garlic
1 tsp. dried basil
1/4 tsp. paprika
