As I woke this morning at the crack of dawn to train a client, I caught a brief glimpse of the royal couple making their way from the ceremony. A million fans lurched in the London streets as I poured myself a cup of coffee and helped myself to a heaping bowl of freshly made granola with berries and soy milk.
A huge fan of granola, when I buy store bought brands, they are either too oily, too sweet or too salty, so why not make a slightly healthier brand? Lower in sugar with no salt and just a few simple ingredients, you can make this granola in 20 minutes and serve it up with some soy, almond or hemp milk for a delicious start to your day.

Chocolate Cherry Granola
2 cups old-fashioned gluten-free oats (uncooked)
1 tbs. roasted carob powder (optional)
sprinkle of cinnamon
1/2 cup roasted almonds
1/2 cup to 3/4 cup agave nectar (more or less, depending on how sweet you want it - I prefer less!)
1 tbs. vanilla
1 cup cherries
1/2 cup vegan chocolate, optional
Preheat oven to 350 degrees. In a bowl, mix everything together except cherries and chocolate. Spread mixture on a cookie sheet lined with parchment paper. Bake for 20 minutes and remove from oven. Allow to cool, then move to a glass bowl. Mix in cherries and chocolate. Eat immediately or store in a glass container!
