What's For Breakfast: Cashew French Toast!

If I could start each day with a heaping plate of French toast I would. There's something about biting into a thick slice of savory bread with that decadent crunch, each slice coated with all sorts of goodness, that just makes winter suddenly better. While traditional French toast uses eggs, this recipe is completely vegan (choose your bread wisely) and takes only a few minutes to prepare. Experiment with different nuts (hazelnuts, macadamia nuts or almonds) and top with berries and agave nectar for a delicious, healthy start to your day!
Cashew French Toast
Ingredients: 
8 slices of bread
2 cups cashews
1/4 cup water
1/4 cup vanilla hemp or soy milk
1/4 tsp. vanilla
1 tbs. agave nectar
pinch of cinnamon
In a food processor or blender, combine cashews, water and hemp milk. The consistency should be similar to pancake batter. If it's too thick, add more water or milk. Mix in vanilla, agave and cinnamon. 
Coat bread on both sides and let excess drip off. Heat a skillet with cooking spray or coconut oil and cook each slice a few minutes per side. Enjoy!
