Snack on This: Butternut Squash Hummus and Vegetable Crackers!

There are a plethora of snacks to choose from: fruit, nuts, homemade energy bars, smoothies, yogurt, string cheese... the list goes on and on. But sometimes, you just want something different - creamy yet crunchy, full of flavor, satisfying and healthy. What's the answer? Homemade hummus and vegetable crackers to the rescue! 
Instead of purchasing store bought crackers, make your own vegetable crackers at home. A healthy butternut squash hummus is a perfect topper to these crackers, making an afternoon snack that is not only portable but incredibly healthy as well.

Vegetable Crackers
Ingredients:
1 1/2 cups ground flaxseed
1/2 cup chopped celery
1/2 cup chopped tomato
1/2 cup almonds
1/2 cup sunflower seeds
1/4 cup chopped carrot
1 tsp. cumin
Preheat oven to 300 degrees. In a food processor, blend all ingredients. Spray a cookie sheet with cooking spray or rub lightly with coconut oil. Spread mixture on tray as thinly as possible. Slice dough in the shape of crackers you desire and bake for 30 minutes. Remove from oven. Let cool before serving.

Curried Butternut Squash Hummus
Ingredients:
2 cups chopped roasted butternut squash (To roast squash, cut into 8 pieces, brush with oil and bake flesh side down for 45 minutes at 400 degrees).
1 can garbanzo beans, drained and rinsed
1 clove garlic, grated
1 tbs. extra-virgin olive oil
1/4 cup tahini
2 tbs. fresh lemon juice
1 heaping tbs. curry powder
1 tsp. ground cumin
black pepper to taste
Place all ingredients in a food processor or blender and process until smooth. Serve chilled or at room temperature with crackers!
