Playing on a recipe for almond butter cookies, I decided to substitute chunky natural peanut butter and sprinkle in some oats instead. Peanut Butter Chocolate Chip Oat Cookies
1 cup unsalted peanut butter
3/4 cup organic sugar
1 whole egg
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 cup oats
1/2 cup organic vegan chocolate chips
Preheat oven to 350 degrees. In a medium bowl, stir together all ingredients, adding chocolate in last. Drop dough by rounded tablespoons onto parchment lined baking sheets (or a greased cookie sheet). Bake for 10 minutes or until lightly browned.
