10 Minute Flourless Cookies!


Playing on a recipe for almond butter cookies, I decided to substitute chunky natural peanut butter and sprinkle in some oats instead. Baking in 10 minutes, I served them to a friend, and she immediately said: "You should sell these! Seriously." Perhaps the easiest cookies I've ever made (and with no flour), the batter consists of just a few ingredients. The chocolate stretches delicately with every single bite - the key is not to overcook them. If you have a child, these are the perfect cookies to let them help you with. They are easy to stir and there's no big clean-up. The next time you are in the mood for a decadent dessert, try these cookies!
Peanut Butter Chocolate Chip Oat Cookies
1 cup unsalted peanut butter
3/4 cup organic sugar
1 whole egg
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 cup oats
1/2 cup organic vegan chocolate chips
Preheat oven to 350 degrees. In a medium bowl, stir together all ingredients, adding chocolate in last. Drop dough by rounded tablespoons onto parchment lined baking sheets (or a greased cookie sheet). Bake for 10 minutes or until lightly browned.
