Thanksgiving Leftovers: 3 Healthy Ideas!

You've eaten the turkey. You've gorged on the casseroles. You've been in your food coma. You say to yourself, "I never want to eat again." But, a few days later, your appetite returns to normal, and you might look at your refrigerator still stuffed with leftovers and think, "What can I do with these?" Try these 3 simple meals to get rid of your leftovers without simply piling them on your plate.
Turkey Tacos
Ingredients:
turkey, pulled apart
lettuce
tomato
diced onion
black beans, rinsed and heated
1/2 avocado, chopped
1 tsp. nonfat greek yogurt
whole wheat tortillas
Fill one tortilla with all ingredients, wrap up and serve!
Sweet Potato Casserole Soup
Ingredients:
sweet potato casserole
veggie stock, to taste
1/2 cup peanut butter
chives, to taste
Take the leftover sweet potato casserole and dump into a pan. Heat with veggie stock, add a 1/2 cup natural peanut butter and heat until you have your desired consistency. Top with chives.
Turkey Shepherd's Pie
Ingredients:
turkey, pulled apart
mashed potatoes
leftover veggies, to taste
soy cheese or low-fat version
Layer a casserole dish with mashed potatoes, leftover veggies, turkey and layer cheese on top. Bake at 400 degrees for 20 minutes, or until cheese is bubbly.
