Baked Sweet Potato Chips!


Some of the most popular lunches involve chips and a sandwich. Perhaps because it's fast, but the reality is that there is often little nutrition in these lunches - especially the chips. That is, until you bake sweet potato chips. A big fan of sweet potato fries, these are just as healthy and satisfying when you are craving something crispy and slightly sweet. Play with spices and enjoy a healthy dose of vitamins and antioxidants that sweet potatoes (or yams) provide!
Baked Sweet Potato Chips

1-2 sweet potatoes
vegetable cooking spray
favorite spice (chili powder, cayenne, garlic, etc.)
Heat oven to 350 degrees. Peel sweet potato and slice thin (like a thick potato chip). Cover a cookie sheet with foil, then spray with vegetable spray. Lay sweet potato chips on the foil, rubbing each one lightly in the veggie spray. Spray the tops of the potatoes and then sprinkle with spices. Bake for 20 minutes, turn, sprinkle the other side, and bake for another 10 minutes. 
*Note: If you don't like cooking spray, place the chips in a plastic baggie with a little oil and spices, shake until well coated and then sprinkle onto cookie sheet.
