I love cooking shows and old cooking shows rock. I remember watching Great Chef's on PBS as a kid. Yes, I was a bit of a dork. This video is from 1994 and at the time the Ritz Carlton in Chicago was a bastion of modern cuisine.
When you see the dining room and the food at the end try not to laugh, it's hard to realize this is only 16 years ago. Well before bistronomic or molecular cooking, food looked classic and predictable by today's standards. Every few weeks I'll try to throw an old video like this in to the Thursday mix to have some fun!
I was in this kitchen once and to say it's cavernous doesn't do it justice. Place was HUGE!
