Get Your Granita On

Summer is almost here and while it's hard for us allergy-free peeps to walk by fro yo shops we do have the option of having a refreshing sorbet or granita. Granita is basically shaved ice. I like to think of it as a more rustic form of the sorbet. Chef Michael Ponzio's Cibo: Anybody's Guide to Italian Cooking has some good recipes you can make at home.

Lemon Granita

Makes 4

Ingredients:
8 oz. fresh lemon juice
1 lemon zested
4 oz. sugar
8 oz. water

Method:
1. In a pot, bring the water and sugar to a simmer until the sugar has dissolved.
2. Whisk in the lemon juice and zest and remove from the heat.
3. Pour the juice into a shallow container, cover and freeze.
4. Once frozen, scrape the granita with a fork to make ice shavings.
5. Serve the ice in a chilled bowl.

Orange Granita

Makes 4

Ingredients:
8 oz. orange juice
4 oz. sugar
1 orange, zest and juice
8 oz. water
1 orange in 12 segments
8 fresh mint leaves, sliced

Method:

1. In a pot, bring the water and sugar to a simmer until the sugar has dissolved.
2. Whisk in the orange juice and zest.
3. Pour the juice into a shallow container, cover and freeze.
4. Once frozen, scrape the granita with a fork to make ice shavings.
5. Serve the ice in a chilled bowl.

Cherry Granita

Makes 4

Ingredients:
24 oz. sour cherry juice
8 oz. lemon juice
8 oz. water

Method:

1. Mix all ingredients together.
2. Pour into a shallow hotel pan.
3. Freeze until solid.
4. Chop with an ice pick and store in the freezer.
