Play with Food: Mud Pies and More

Play with Food is my recap of news, events and helpful hints that I happened upon this week. First up, I want to mention that I had a ball on the radio last Saturday with the fabulous Bill Leff and Jenna Bell, the Right Around Chicago blogger. If you missed the original broadcast here's the podcast.

If you follow a GF diet and love retro I recommend stopping by Angel Food Bakery. Pastry Chef, Stephanie Samuels says their gluten free offerings include: "mud pie" which is a flourless chocolate cupcake and the "hedgehog" is like an Almond Joy candy bar. Angel Food also makes sour cherry macaroons that are GF. I've made tons of macaroons but never sour cherry ones and that just sounds like a little piece of GF heaven. Samuels says, "With the increasing interest in food allergy sensitive items, I am starting to work on more options for the bakery." I can't wait to see what else she comes up with.

This week I received the always helpful a la Carte Living newsletter from Nutritional Counselor, Holly Babich, CHC, AADP. Holly is a graduate of the Integrative Institute of Nutrition. She works with clients to "create a happy, healthy life in a way that is flexible, fun, free of denial and discipline". I wanted to share Holly's recipe for Sweet Potatoes with Lime and Cilantro. Sweet potatoes and other starchy veggies satisfy my "bread tooth" and the desire for the comforting texture of all those baked goods I can't eat.
Sweet Potatoes with Lime and Cilantro
Prep time: 10 minutes
Cooking time: 30-40 min
Yield : 4 servings
Ingredients
4 sweet potatoes
1/2 bunch fresh cilantro (Cilantro is also a natural detoxifier)
2-3 limes
Butter, olive oil, soy butter, salt (all optional depending on your allergy)
Directions
  • Wash the sweet potatoes and bake them whole, in their skins, at 375 degrees until tender (~40 minutes)
  • Wash and chop cilantro leaves. 
  • When sweet potatoes are done, slit open the skin and place on serving plate. Season with salt and dots of butter or a sprinkle of oil, then squeeze fresh lime juice all over, and shower with cilantro leaves
