Pumpkin Chocolate Chip Cookies - These are not regular cookies, but have a cake-like consistency like little pumpkin bread cookies! I omitted walnuts. The use of real pumpkin leaves them heavier and more moist. They seem to get soggy when left out, so I recommend refrigerating them. They actually taste better cold! Follow the directions and they'll be a hit.
