If you're like me and are pumpkin-obsessed when it comes to food every fall, there's a pretty good chance you've stocked up on a few extra cans of pumpkin to survive through the winter. I've attached some photos of the results of four recipes I've tried this year with anecdotes on how I strayed from the original recipes to create my own pumpkin goodness. Of course there were horror films playing in the background (Bob Clark's BLACK CHRISTMAS) while I was creating havoc in the kitchen – mainly from issues occurring during the pumpkin truffle chaos!
The original recipes found online before I altered them:
Pumpkin Mousse Parfait - This one was just a basic blend of a package of softened cream cheese, a can of pumpkin (1/2 cup might be better for thicker consistency), 1/4 c. sugar, 3/4 tsp. pumpkin pie spice, 1/2 tsp. vanilla and Cool Whip. I layered this on the bottom of 4 serving cups, then mixed the rest with Cool Whip and put a layer of that down, then a dollop of Cool Whip on top. The mix-in options are endless. Chocolate pudding and graham cracker crumbles would be great with it. Ooh, or cheesecake pudding.
