Dreaming of Mashed Taters…and all things Thanksgiving

Thanksgiving is my favorite holiday of the year.  There’s nothing I love more than getting together with family and friends to eat and drink, so a holiday devoted to just that – plus taking the time to truly think about all we have to be thankful for – is, to me, the ideal holiday.

This year the hubby and I will be joining some friends here in Chicago.  I’ve been tasked with the mashed potatoes, one of, I think, the best dishes on the Thanksgiving menu (along with the turkey, sweet potatoes and marshmallows, pumpkin pie, etc…).  In true Chewables form, and because I read recently that the average Thanksgiving dinner is 4,500 calories (yikes!), I’ve been in full-on mashed potato mood, scoping out recipes for healthy (but still delicious) mashed potatoes.

Right now, I’m down to two options: SkinnyTaste’s Skinny Garlic Mashed Potatoes and Ellie Krieger’s Garlic Mashed Potatoes.  What do you think?  Know of any really great but still healthy mashed potato recipes?  Here’s some inspiration!

Update: Went with Skinny Taste's Garlic Mashed Potatoes, and they were amazing (especially because the hubby took care of cooking duties...what a guy)!  Rather than peeling all the potatoes, he kept the skins on half to give the dish a more rustic feel. He used one tablespoon of milk instead of two because someone (me) may have drank the rest in her coffee (whoops). And the herbs were parsley and thyme, because that's what we had left in our herb garden. A definite make again.

  • Butter Butter and more Butter that's what a Thanksgiving makes ......so go on have a Tofu Turkey and veggie trimmings with the Carob Cake I'll be on the side of debauchery and lovin it ......i may shorten my life but what a tasty life it was.

    I'm all for splurging on what you love (although maybe get in a Turkey Trot in the am?)! Enjoy it, Craig. And I promise, no tofu turkey at my Thanksgiving table (that totally wouldn't do!), just great food with some tricks to make it a bit healthier. Happy Thanksgiving!

    One 4500 calorie meal does not an unhealthy person make. Find the most delicious mashed potato recipe out there and enjoy it with your friends. Geez, it's one day!

    Nope...but it can add up! 3,500 = 1 pound, and it's easy to go overboard during the holiday season. I'll enjoy a mashed potato recipe that's healthy and delicious just as much as one that's not healthy and delicious...and then splurge on pumpkin pie!
