Cooking With Kids Recipe: Sharp Mama Kel's Easy-Peasy Meatballs

I keep pretty busy with my young charges everyday. I mean, we are on the go. A lot. Which means we need sustenance - food! Which leads to cooking...and what a great way to teach cool kids yet another skill, right? I find that, if you build in a little time and let kids help create the foods they're going to eat by adding a few things they like, even picky eaters tend to dig in. Here's one of our favorites:

  • 1 lb. ground beef
  • 2 slices of bacon, finely chopped
  • 1 egg
  • 1 tsp chopped garlic (or more, if you like)
  • 3 tbsp bread crumbs
  • 3 tbsp shredded cheese (for kids, I use Cheddar; for grown ups, I use Parmesan)
  • dash of oregano
  • pinch of nutmeg
  • salt & pepper to taste

  • Preheat oven to 400 degrees
  • in large bowl, using your hands, mix all ingredients
  • lightly oil your hands, then roll between the palms to shape into meatballs
  • place 1 inch apart onto a baking sheet (I line mine with parchment paper for easy clean up)
  • bake for 15 minutes
  • Optional step: sear the meatballs in a pan to get a nice, brown coat on them, then braise them for 15 minutes on low heat in whatever sauce you desire (sometimes I use a tomato sauce, other times, I just braise them in their juice mixed with a little beef broth)

Some people like to serve the meatballs before searing and braising - that's totally okay! But, personally, I love giving the flavors an extra little "oomph!"

Bon Appetit!
