Super Bowls of Healthy Snacks for the Big Game

It's that time of year again to root for your favorite team and attend Dave's annual Super Bowl party.  At Dave's, you will consume your favorite libations and large amounts of hot wings, nachos and other decadent snacks.  Like many of Dave's friends, you will end up overeating and consuming way too many calories.  Because Dave decided to be more health conscious in 2010, he is doing something a little different this year by providing lighter versions of those favorite game time snacks.  Check out Dave's Super Bowls below.

 

Turkey in a Blanket

Serves 8

Ingredients

  • 1 package turkey hot dogs
  • 1 can crescent roll dough

Directions

Preheat oven 400. Separate dough into triangles. Roll up links in dough, starting with the link at the wide end of the triangle. Place on ungreased baking sheet, with the tip of the crescent underneath. Bake for 10-15 minutes or till golden brown. Serve with mustard to dip.


Ranch Dip and Vegetables

Serves 6

2 1/2 tablespoons dip and 1 cup vegetables each

Ingredients

  • 1/2 cup nonfat buttermilk
  • 1/3 cup low-fat mayonnaise
  • 2 tablespoons minced fresh dill or 2 teaspoons dried
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 6 cups vegetables, such as baby carrots, broccoli and cauliflower florets, celery, grape tomatoes

Directions

Whisk buttermilk, mayonnaise, dill, lemon juice, mustard, honey, garlic powder and salt in a medium bowl until combined. Serve the dip with vegetables of your choice.

 

Turkey Chili

Serves 12 - 1 cup each

Ingredients

  • 1 pound ground turkey
  • Salt & freshly ground pepper, to taste
  • 1 1/2 tablespoons canola oil, divided
  • 3 onions, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 6 cloves garlic, minced
  • 2 jalapeno peppers, seeded and finely chopped
  • 2 tablespoons ground cumin
  • 2 tablespoons chili powder
  • 1 tablespoon paprika
  • 2 teaspoons dried oregano
  • 1 28-ounce can diced tomatoes
  • 8 sun-dried tomatoes, (not packed in oil), snipped into small pieces
  • 2 bay leaves
  • 3 19-ounce cans dark kidney beans, rinsed
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice

Directions

Season meat with salt and pepper. Heat 1 1/2 teaspoons oil in a Dutch oven over medium-high heat. Add half the turkey and cook, stirring occasionally, until browned on all sides, 2 to 5 minutes. Transfer to a plate lined with paper towels. Repeat with another 1 1/2 teaspoons oil and remaining meat.

Reduce heat to medium and add remaining 1 1/2 teaspoons oil to the pot. Add onions and bell peppers; cook, stirring frequently, until onions are golden brown, 10 to 20 minutes. Add garlic, jalapenos, cumin, chili powder, paprika and oregano. Stir until aromatic, about 2 minutes.

Add diced tomatoes, sun-dried tomatoes, bay leaves and reserved meat. Cover and simmer, stirring occasionally, until turkey is very tender.

Add beans; cook, covered, stirring occasionally, until chili has thickened, 30 to 45 minutes. Remove bay leaves. Stir in cilantro and lime juice. Adjust seasoning with salt and pepper.

 

Nacho Bar

Serves 8

Ingredients

  • 1 bag wheat tortilla chips
  • 8 ounces reduced fat cheddar cheese
  • Jalapenos
  • Sliced black olives
  • Ground turkey (see recipe)
  • Guacamole (see recipe)
  • Fresh tomato salsa (see recipe)

Guacamole Recipe

• 3 avocados, diced (about 3 cups)
• 1 cup Fresh Tomato Salsa (recipe follows)
• 1 tablespoon lemon juice
• 1/4 teaspoon salt

Fresh Tomato Salsa Recipe

• 4 cups diced tomatoes, (5-6 medium)
• 3/4 cup finely diced red onion, (about 1 small)
• 1/4 cup lime juice
• 1-2 jalapenos, seeded and minced
• 1/2 cup chopped fresh cilantro
• 1/2 teaspoon salt
• Pinch of cayenne pepper or more to taste

Combine tomatoes, onion, lime juice, jalapeno, cilantro, salt and cayenne in a medium bowl. Refrigerate until ready to serve.

Spicy Ground Turkey

• 8 ounces lean ground turkey breast
• 1/2 cup chopped onion
• 1 10-ounce can diced tomatoes with green chiles
• 1/2 teaspoon ground cumin
• 1/2 teaspoon ground chipotle chile or 1 teaspoon chili powder
• 1/2 teaspoon dried oregano

Place turkey and onion in a large nonstick skillet over medium heat. Cook about 10 minutes, but make sure you break up the meat. Transfer to a colander to drain off fat. Wipe out the pan. Return the meat to the pan and add tomatoes, cumin, ground chipotle (or chili powder) and oregano. Cook over medium heat, stirring occasionally, until most of the liquid has evaporated, 3 to 6 minutes.

To serve, place guacamole, salsa, meat, olives, jalapenos, cheese and olives in Lazy Susan and put tortillas in bowl. 


Naked Grilled Chicken Wings

Serves 12

Ingredients

  • 3 pounds fresh chicken wings
  • Mesquite seasoning or seasoning of your choice

Directions

Rub seasoning on fresh chicken wings and let marinate for 1 hour in refrigerator. Spread wings on sheet pan and bake for 20 minutes in oven. Take wings out of oven and finish on grill over medium to medium high heat. 

Serve with your favorite dipping sauce (i.e. BBQ, honey mustard, teriyaki, jerk, etc.).

Love your nacho bar idea. Turkey chili, also, one of my favorite things to make. You can dress it up so many different ways.
